One thing I like about Blue Apron is that they introduce you to new ingredients.  In the Vietnamese Chicken Wings dinner there was a spicy paste called  Sambal Oelek.  As I like spicy, food…but, hate sriracha I was interested to taste the paste. It was wonderful!  So, after loving the dinner I decided to try to either make my own or find some to buy.

While researching ingredients and recipes I realized that I had all the ingredients I needed to try making some!  Out came the blender.

Mix in the blender:

  1. 3oz package of dried red chilies, stems removed
  2. 15 cloves of garlic
  3. 1/4 cup safflower oil
  4. 3/4 cup rice wine vinegar
  5. 1 tsp sugar
  6. 1 tsp salt
  7. 1/4 cup lime juice

I mixed this all together and it was HOT (not kidding).  I realized that some might say it was HOT and without much flavor.  So, I added 15 pickled garlic cloves and a tablespoon (or so) of the pickling juice.  I like it better after this addition.

Still, it is HOT.  This is not a joke! Use with caution.
