Apricot Chocolate Pecan Cookies


I wanted apricot cookies so I went in search of a recipe and found this one.

I had tried another recipe of theirs previously for coconut oatmeal cookies.  These were horrible!  They looked incredible in the oven until about 1 minute before they were supposed to be done.  At that point they completely collapsed into paper-thin nothings.  They were so bad I threw away the cookies AND the dough!

So, with some trepidation I gave Betty Crocker another shot.  These cookies have incredible texture.  They are slightly crunchy on the outside, and soft (yet dense-ish) on the inside.  But, they lack flavor (even with the modifications!).


  1. 1/3 cup Splenda and 1/3 cup sugar
  2. 1/2 teaspoon ground cinnamon
  3. 1 teaspoon green cardamom
  4. 1/2 cup dark chocolate chips

Thankfully, I only cooked one-half the batch.  I like these enough that I will be bumping up the flavor in the remainder.  I will be adding more chocolate, pecans, cinnamon, green cardamom, and apricot extract (if I can find it locally – unlikely!).  Look for the post.
